Yup! Doable with gamescope-git and some env vars set to true. :)

Could you give me / direct me to an explanation? Would love to set this up for myself.

Edit: is it only what archwiki says or is there more?:

Gamescope is a requirement for HDR10 support when playing games, to make use of this feature you must launch your Gamescope session using the --hdr-enabled flag.

Pretty cool, and I assume non-game programs (like vlc) also have hdr when run through the steam session?

Oh I don't know about that tbh. Never tried it. Plasma 6 should have HDR to an extent and HDR work in general has picked up and is progressing rather nicely for Linux in general. :)
