when I was back in Seattle 2009 ish there was a ban on gas kitchens...not an outright ban but the filtration system for the restaurant build out I was involved in was 100k alone, with filters to ba changes daily, weekly and monthly.
the next kitchen was a remodel that removed the entire gas kitchen and replaced it with electric.
Not until the price of electricity drops to the same price of gas.
