I could create one, although I can't devote time to moderation. I think Libera would be a great home for it.

Still hoping to see if other communities already exist because joining would be better :)

And it really looks like it's the first channel of its sort:

This search engine searches among hundreds of networks, including LiberaChat and OFTC, and didn't find anything:

Search for privacy gives 7 results, but all with a different focus (and most of them tiny).

No relevant results for bigtech, fascism, google, amazon, facebook, boycott, gafam, faang.
