Well no, you’d have a much higher risk of heart disease, cancer, diabetes, and overall death on the bacon only diet, obviously.
Nutritional deficiencies would kill you before then sure, potatoes were a bad choice for your example though as you can get almost everything from them.
There’s tens of thousands of plants, vegans eat a much more varied diet than the average carnist. It’s unavoidable as you need more mass to get more calories and impossible to design an amino acid deficient meal unless you’re eating a calorie deficit. They are not higher risk, they are lower risk. This is objective stop basing your reality on vibes.
