I saw in the discussion on this toot that you can buy "commercial" televisions which are typically used for like menus signs for business etc that aren't smart TVs and actually are probably slightly more durable. I'm generally planning to try and go that route on my next TV

I looked at the same thing. I just got a 65" Samsung and walled off its internet access. Sorted.
That's probably a better way to go
I work for a touch screen company that makes these “large format displays”. The main reason you might not want to do this is that they are designed to prioritize longevity and functional delivery of information over image quality and usability. They’re not good for games or making movies look good. They work, and will be more durable, but a consumer tv will look better and have more options for changing the image. Also if you play video games the latency isn’t great.
