I feel like I'd never be able to complete Celeste due to it's difficulty, any point in playing it?

It does have assist options if that's what you want, Game Maker's Toolkit actually made a video about it. I haven't finished it myself but it was pretty fun, even just exploring and getting the story bits and such.

I felt like that about VVVVVV but I beat that one. Celeste looks very similar. I’m a fairly casual gamer.

It's doable. I play the hardest optional challenges on 90% speed. I don't play a lot of platformers but was able to beat the normal game without using assist mode.

Yeah I'm not a pro at tricky platformers but I was able to get all the missions done without adjusting difficulty or using assists. What people don't realize is when you die you resume immediately where you left off so you never have to backtrack or replay levels. If you don't get frustrated banging your head against the wall, it is actually pretty easy.
