When I tried to install the latest updates today, Creative Cloud Desktop forced me to sign up for a trial. Has anyone else seen this, and if so, is there a known workaround?

This issue is already covered in the GenP Guides and Troubleshoot Section. If the CC app is showing Trial or Buy instead of Install, it simply needs to be patched with GenP. Most likely, the CC app has auto-updated to the latest version, so you just need to repatch it with GenP. All of this is clearly explained in the GenP Guides.
