I have done some basic research into this before and it seems to be a bit of a trade secret among release groups. They don't heavily advertise how they're doing it to limit what the streaming services can do about it.

Your best chance would be to use a video capturer and record. However, scene groups actually download the video from the servers. ¿How? Probably they found an exploit and developed a tool around it but certainly it's private otherwise the exploit might get fixed.
There's the way of using non-HDCP-compliant HDMI splitters to screengrab the content, but I think some groups have found a way to decrypt the content of streaming sites directly.
Is there something in there you want? Why don't you just sit and enjoy getting most of their content from torrent? For the best of everybody I prefer the methods are not widespread so release groups can keep doing their job.

In short, they somehow obtain the Widevine L3 decryption keys, then they download the encrypted stream (Every browser downloads it while normal streaming, it's trivial). The non-trivial thing is to get the decryption key and then to decrypt the encrypted file you've downloaded.
As to how exactly they're doing it, it's most likely a "secret" in order to limit the streaming companies in their capabilities to fix those "vulnerabilities".
You, as a normal user, can buy a Software which can download from the most popular platforms. It's called "Streamfab". And if you're a real pirate, you can download that piece of software cracked, too! Keep in mind that you'll need valid subscriptions in order to rip directly from the streaming providers and at that point you don't really need to download anything off of them, since you have legal access to their library.
But why go through that hassle and not just download the movie straight away from a P2P source?

If this is just for the fun of it I would try to run these services inside a virtual machine and just screen capture them. Never tried it but I don't see a reason why it won't work.
