A pinch of cosmo canyon salt
A splash of milk (probably any dairy?) in stews and meat based sauces just before serving.
Asafoetida and curry leaves. Not exactly secret, but skipping these will make my food taste bland. Also chopping curry leaves will add more flavour.
Vinaigre. Acidic, without much taste.
Also don't underestimated how far away a pinch of sugar can bring you. A 1/3 of a pinch part portion isn't unhealthy as long as your not already consuming huge quantity of it from other sources.
Balsamic vinegar hits both of those
Maybe, but not every dish needs both, so I keep my cider vinaigrer, that is on the sweeter side by the way.
