Disto packages had issues with unofficial repos like forever.
Indeed, but this is unfortunate to not have official repos supporting AMD GPUs (Mesa) and H265
Use MPV, I can recommend Celluloid
MPV could be an option. What is Celluloid?
A GUI in GTK3 I think. Very well packaged as Flatpak too, Wayland native, portal support, uses Pipewire

I had a look at zypper dup, I basically can either switch to packman.links2linux.de, or switch to OpenSUSE, for each of the conflits.
Which one is better?

How about using some isolation? nix-env, distrobox, or flathub (official builds only?). I have listed them in my own (personal) order of preference.
Thank you for your suggestion, I ended up doing that in the end. Removed VLC from the repo, used the Flatpak. Seems to works fine now!
