Have a look at E/OS. I rooted an old Samsung S7 Edge recently. They have an Easy Installer app which said it supported my phone; however, I couldn't get to work so did a manual install instead.
If there is not a custom ROM than uninstall all Google apps with adb Btw there an Android app called canta to do it.
Moto RAZR 50, I'm running a stock ROM but with Magisk and manually swapped Google Play services with microG. It's not a "run and use" solution but I have working notifications in apps which require them and no Google shenanigans
I've had some luck in the past with simply disabling all the Google stuff via root.
Sometimes this caused bootloops (10 years ago). More recently it caused a recurring error message. Sometimes it worked just fine.
Re-enabling Google services and rebooting typically resolved the issues.
