I don't know if it's what you want but on Linux I had guiscrcpy to open my phone screen as a window and control it with my keyboard and mouse seamlessly. Nowadays I have switched to kdeconnect (there's gsconnect for gtk desktops environments)
The default setting is probably showing the menu, up to a duration of some seconds, so that you can choose other OS (e.g. windows as dual boot). Then you probably need to edit a text file and run Update-Grube. Did you run the update grub command to "compile" the config? And make sure you're using grub2
