I don't much care for them either but...it's free. You should claim it because you don't like them.
But then you have to touch their store, plus you're boosting their metrics for user count
You can get the free games over their website, if you don't want to install the client. You are right about boosting their numbers though.

But can you just download and play it on Linux via Steam/Proton or do you need to install their launcher?
You can download it via Heroic, which also works for GoG and some other services.

Yeah that's what I use as well
Heroic also works on Mac and Win.
Sign into your Epic account, set Heroic to automatically add games to Steam, then launch from Steam.
You can use Bottles,Heroic,Lutris but Heroic was Less problematic + the only con its electron but i could just close the launcher while in a game its not a big deal
