I remember when i was younger just wanting to watch a star wars tv series about the inner workings of the senate, which still sounds infinitely more enjoyable than "vader kill to show power heavy breathing".

There's a bit of Clone Wars for you, kinda, but not really
I read the Jedi Apprentice books which were about young Obi Wan's adventures with Qui Gon leading up to phantom menace as a really little kid and from my vague memories they were kinda close to that but also aimed at children
