Tbf cost of living in such areas, assuming not remote, can be igher too and that consumes a chunk of the higher salary.

I had a $100K+ salary when I lived in northern Louisiana. I and two other people rented a house for $400 a month (total rent). I still somehow managed to not save any money. I even had the opportunity to buy the house we were renting for $15K and I passed.
