Remove any biometrics from your device, its easy to "forget" your pin but you cant forget your fingerprint.
This isn't realistically helpful. The cops will just smash your phone. OP didn't ask how to keep cops from accessing their video; they asked how to keep cops from deleting/destroying video.
For iOS (and I believe android), triggering an emergency call by hitting the lock button a bunch of times of times also disables faced/touchid
Once the phone has been restarted you can’t use biometrics anyways
