Piracy is good and you should do more of it. Use https://aniwave.to/ and https://4anime.gg/ for streaming, and https://nyaa.si/ for torrents. Piracy is the only means of digital protest that audiences have to fight poor worker treatment.
I find the sheer amount of manga / anime to be really overwhelming so I usually just stick to like "best of" lists. I have seen most of the big important ones but I'm sure I'm missing out on a lot of smaller stuff that is just as good.

I tried to watch it once and got distracted by some jangly keys. I def need to check this one out.
I’m the opposite in that I always crave novelty. I bet the stuff on your list is all tested and true though. Mind dropping some stuff you consider top tier?
Stuff like Neon Genesis, Cowboy Bebop, Samurai Champloo, Clannad, Madoka Magica, Berserk, A good chunk of Gundam, Steins Gate, Lain, FLCL, Kaguya-sama, Vinland Saga, One Punch Man, My Hero Academia. A little bit of everything.
One I thought of that doesn't get brought up much is Shiki - really good if you like a slow burn horror.
I have not seen Fullmetal Alchemist or One Piece those are prob the biggest ones I should've watched.
That’s a solid list. If you ever get around to FMA, Brotherhood was made after the manga finished and is generally considered a better start. The older adaptation has merits as well though.
