In no particular order:

The zombie baby from Dawn of the Dead.
The zombie Wanda Maximoff from Marvel's "What If...Zombies!" (All of them are pretty awesome, though. They still have their powers even as zombies)
The ending of Shaun of the Dead where the zombies are given menial jobs.
