It's pretty likely that that was literally the inspiration for the "unicorn" and they just got it wrong. I mean, damn, medieval artists couldn't even draw a HORSE so it's no surprise that something slightly more exotic like a rhino would get scrambled.
Even the word "unicorn" just means one horn. So, that's a unicorn.
