Need to change battery? Here are some teardown guides: ifixit.com
For more easily replaceable batteries? You can get a Fairphone (www.fairphone.com) if water resistance is not important to you. Fairphone 4 is IP54 so it is somewhat water resistant, but not submerge-resistant. If you want repairability, you can get a fairphone.
May I ask why you avoid Samsung? After trying out many different brands (currently using a Sony Xperia) I actually think Samsung might be the best option out there. There is always a big selection of cases and screen protectors available and the user experience is usually great. Not trying to advertise or anything, just curious.

There are also phones with both water-submerge resistance and replacible batteries (but not as repairable as a Fairphone): Samsung Galaxy xCover (https://www.samsung.com/us/business/mobile/phones/galaxy-xcover-pro/)
That‘s great and all but I don‘t buy new phones anymore. And the majority of phones aren‘t fairphones. I also avoid Samsung phones like the plague.
