Clover typically takes less water to survive than turf grasses and puts out lovely flowers that are pollinator friendly for a pretty good portion of the year. The kind of clover that grows in my area (Tennessee, USA) is nearly evergreen too, starting earlier in the spring and staying green later than turf grasses.

One small point to correct/adjust is the idea that these sites were "ignored."
The pyramids have been a tourist attraction for thousands of years. The Romans talked about visiting them. I'm guessing there was never a time when they weren't of interest to people in the area. Same for something like the Colosseum, Parthenon, or Pantheon. They might not have always prioritized preservation, but they certainly didn't forget they existed.

But the problem is any deserts are deserts for a reason: lack of rainfall and/or natural inflow from rainwater upstream. The result is that you have to keep pumping in tons of water and/or rely on agricultural runoff which is nutrient-depleted and usually full of chemicals.
