Maybe a dumb suggestion, but physically switch the positive and negative wires on the motors?

This is the answer.
If it's a DC whoop style motor, switch them.
If it's a BLDC with the standard three wires, just swap two of them, pick any two and swap them.
Switch the two outer wires from the motor to the ESC around and leave the middle one as it is.
Have you tried using the betaflight CLI to set the motor direction? Do other changes you try to make persist in betaflight?
Yes other changes persist! I’m giving this a go, if it won’t work I’ll reverse the two outer wires of the motors.
You sure the props are on right?
