I want to keep system-wide auto-updating but I would like one specific app not to. Is that possible?

Generally speaking I don't think this is supported feature to explicitly prevent users from using outdated apps, but there could be a way to hack around it.

For example, you could get the app from a different app store. You could also try resigning the APK with your own key so it doesn't match the one in the play store, blocking updates, but this seems to trigger play protect on some devices.
