It always catches my attention when a game is a mix of genres that sound like they shouldn't be. "Rougelite City Builder" was another that sounded like it didn't make any damn sense but they pulled it off well (Against the Storm).

I liked Kill It With Fire 2, it's more of the same but with more elaborated map and tasks, which is excellent. Also played Phosfi, heavily "inspired" in Hollow Knight, but it needs some time in the oven.
