If it's not CPU cycles, you can probably get away with upgrading everything but the CPU and Mobo. DDR5 is too expensive to stuff in a server as of present, you can probably glide on DDR4 for a few more years.

Honestly, its not even performance, GPU and RAM will need upgrading before the CPU starts being an issue. Its just the ITX motherboard that annoys me, there's a lot of cool stuff I could do with more expansion slots. But I think you're right, I expected to get 3-5 more years from that CPU, it's probably best to just wait for the new stuff to become more affordable
I was on the same boat with a Dell Mobo that had non standard PSU and I realized if I didn't work on the serve hardware I didn't actually care. I'd say wait for the next gen of DDR5 CPUs to come out and grab an old one for cheap
