If caffeine is bad why does its absence make my head hurt?

ugh yeah if you get migraines do not fuck with cold turkey. I don't and it's less bad but its still a lot easier if you taper at least a little.

I had to switch to tea-based caffeine this year due to nausea/anxiety issues brought on by caffeine, and the crashes were way too hard. it's been more manageable than I thought, I wish you luck

Hard science idk, but article I read quoted a "coffee researcher" as saying it should be about a week. Probably varies depending on a bunch of factors.
Was that coffee researcher's name Mr. Coffee?
I don't think it ever totally resets. mine goes right back to the way it was when I was consuming large amounts of caffeine even though I only take it once every couple of months now. but it's never taken me more than a week to break the caffeine dependency.

Actually though I might need to do the same. I can survive a day or two break but I'm notably dull and lately I've been feeling a little jittery, mentally at least, but still tired :(

Good luck! I found that herbal teas helped replace the ritual of drinking caffeine, which made the caffeine break a bit more tolerable.
