Just move on. He owes you nothing. There are plenty of great fantasy series out there that are well-written and complete if you need something to read.

Which would you personally recommend? I've enjoyed his writing, as well as Rothfuss and (other end of the spectrum) Pratchett. Sanderson is a good world builder but his writing style doesn't always jive with me, for whatever reason

Martin is a character-first writer, which is nice, but I also like plots that gallop forward with mystery-style page turners at the end of every chapter. Roger Zelazny is that style of writer, and one of my favorites. Take a look at The Chronicles of Amber and Lord of Light.

The Dying Earth series is fun.

A friend recently recommended The Clan of the Cave Bear and The Sharing Knife to me, but I have yet to read those.

I struggled to get through the first season, and right when I started to think I might like one or two characters, they recast them. It didn’t keep my interest, and I probably won’t watch any more of it. I’m not one to give up on shows like this, I usually power through them and find something to like. But I have no interest in GRRM’s world anymore.

I’m someone who read ASOIAF voraciously as they came out, went to one of GRRM’s lectures, met and chatted with him while he signed my book, and just generally was in love with his world-building. I’m done now. No more disappointment for me.

I actually really liked season 1 which made season 2 a bigger disappointment. At some point my wife and I were able to joke and predict when “sad funeral” scene was about to happen for some character you didn’t give a shit about because they were a background blip.

Show has a real problem in that I've zero investment into any of the characters. I really don't care who "wins" or how it happens.

I've still no idea why they went with this instead of Dunk and Egg out the gate. It's so much easier to adapt and you're not blowing half your wad on VFX.

Max has some real issues at its core. I'm dreading it but I just know the Dune show is gonna be a mess too.

Dunk & Egg only works if people are excited about the world. After Game of Thrones that excitement dropped, heavily. Luckily HOTD has dragons, big exciting dragons. It also happens to have a story, at least in season 1, that brought back the excitement and intrigue that GOT season 1 had.

Season 2 of HOTD was still enjoyable, but ended two episodes early. That was a huge unnecessary gamble by HBO in order to save a few bucks.

Dunk & Egg are going to start at a disadvantage as a result. It's a small scale. Luckily the first story, the one they are adapting, is the best story and should be able to keep folks interested.
