This is indeed an obstacle in practicality. You are absolutely right in that any channel under control by the admin could be used as a means to orchestrate a MITM attack and replace my public key with theirs. The only way for this to work is for me to personally provide my public key in a separate, and secure channel like Matrix.
I would like to emphasize that this is all just an experiment for my own interest. I would certainly not recommend what I am doing to anyone else.

I personally think that the simplest solution would be to put the STEP files (don't share STLs, as converting to them is lossy) in a git repo (You could, of course, also format the repo with pictures, a descriptive README, etc.). You would then have a myriad of ways to host that repo i.e. Gitea/Forgejo, Gtihub, Gitlab, etc.
As a side note, it is also very helpful if you include the CAD project files. For example, you could add a FreeCAD project file to the same repo; however, if you do share the project files, do note that it's also very helpful to include the CAD software's version information for future compatibilty reasons.

This is a strawman argument. OP was talking about an age limit for elected officials, whereas you are now talking about age restrictions on the voters. Yes, we are both talking about cognitive decline in decision making; however there is a substantial difference between putting an age limit on those who can be in power vs. putting an age limit on those who can decide who is in power.
I would vote nay for defederating from them. While I personally found their content annoying, someone else may actually find it uesful. I blocked the users, and the problem was solved. This issue may arise again, however, if more spam users pop up on these instances than a single user could reasonably be expected to deal with. This could possibly, again, be fixed by the user blocking the instance, but this would have to wait for user-blocking of instances to be implemented.
I recommend downloading it from f-droid if you want full functionality (like self-hosted sync) for free -- the one in the play store is monetized (however I do recommend donating to the dev if you don't want to pay the subscription fee).
