Because there's plenty of used monitors to be had out there that have DVI on them in some capacity for very reasonable prices.
For instance I just purchased 4 x 24inch Samsung monitors for $15 USD each.

You’ll never get deep bass with 8’s, so yes, a 12 would be the better option if that’s what you ultimately want.

As far as an amp kicking off, it could be a bad ground but it’s probably just not designed for a lot of power. Finding a balance between clean power to maximize the sound output and not damaging the speaker is always a challenge.
It might be that these speakers are wired in such a way that they come out to be 1.3Ohm. Which is below the amp's "rating". Optimally I'd want to be between 2-8Ohms for this amp. Either 4-6Ohm being "optimal" as far as I can tell.
