Very comforting fish and veg with xo sauce lunch

So I've been trying to build a repertoire of super efficient + healthy meals for my WFH hobbit life. Rice and veg was bulk prepped on Sunday and microwaved. Salmon was defrosted from freezer and oven'ed, almost zero minutes active effort. Love to hear peoples' ez meal protips!

Edit: Also is it just me, or after this last round of inflation, do you now totally get why older folks are always like "eating out is a scam" :< ffff

I don't like to do meal prep, it need planning ahead and i like to eat according to my mood

Me too! I've only just started to figure out how to make it work. The trick seems to be something like:

  • Cook one bulk dish every couple days - rice Sun, carrots Wed, chicken Fri, broc Sat, etc
  • Rotate in instant-use stuff like supermarket roast chicken, tofu, frozen veg + sliced meats, cherry tomatoes
  • Play tetris using seasoning when reheating, like in 5-10 mins you could turn the above into a 1-pot rice stew with miso paste + instant dashi, or butter the rice+veg and serve western style, or add soy sauce for asian

I still suck at it though lol. Waste too much when things get busy + get pretty sick of chicken thighs :')

No, I feel the pinch. My ayam penyet is RM9, nasi goreng RM7, and Indian chap fan also RM7 now. :(
