I would say don't even quit after you've done all that. Build your base while working there. You can easily get supplies from them. They sound so checked out.
I've known people that have gotten busted doing that. Minus stealing supplies. They got sued and lost. After the fact is fine as long as you don't have a noncompete, but if you do it while still employed you risk losing your whole biz.
