if you haven't yet experienced the joy of a caidao i recommend them highly to other knife nerds
so versatile. so comically square.
i picked mine up for like $16 at one of my local asian markets and it rips. prep has never been easier. i don't have a huge collection and i don't own anything fancy but still, i barely even touch my other knives anymore.
it's also a great bench scraper. the ideal grip is a lil weird but youtube has plenty of tutorials if you decide it's for you
There's a pretty good Asian market near me. Maybe will. See how I like it vs a chefs knife
