Can a chess expert tell us which side would be favored in this situation? Assuming checkmate for the black side would be checkmating the knight that starts on black’s king square.

The only victory against the Mongolian horde is absolute destruction, lest they regroup and charge once more.

Black to win, unless white can form a Great Wall defense, and then it's a stalemate.

I can't see the Mongolians losing, you can't take any of their pieces without losing your own.

To make it fairer, I'd say they should only be allowed two rows, but my money is still on them

Put into the board editor in lichess (with a king in e8) and eval was about -30.

Positive is in white's favor, negative is in black's favor. -30 is roughly equivalent to black having a 30 point material advantage over white.

Not an expert, but I can easily see a scenario where each knight moves only if it's backed by several knights (which is in turn back by several others).

They have ultimate mutually assured defense, plus chaos offence (teleport into the enemy).

White is cooked

Edit: Even one row fewer knights would still be an unbeatable defense.

Edit2: A single row only of knights would actually be an interesting game. I think it might be close.
