Alex the Parrot learned how to use syntax and grammar, as well as invented his own portmanteaus of existing words to describe complex and mixed ideas.

There is the parrot called Apollo on Youtube that will probably get pretty close to that if not accomplish it. They are like only three years in and the parrot is pretty damn good at categorizing things, even things he hasn't seen before, into categories based on its color, texture, etc. but like everything held above your head is a 'hat' so like true comprehension isn't there.
