Ah neat, my guess was going to be "virgin roasted chicken" which could possibly refer to the oil or herbs used to baste or braise the chicken.
Personally I think they're referring to a Capon. A rooster who had its testicles removed before "puberty". This is done to make dual purpose birds (egg and meat) more palatable for meat purposes.
