Just don't tell her that coffee falls under replicator rations, lest you find yourself "Tuvixed" or have your matter added to the buffer for use like Soylent Green.
She complains about having to use her ration on coffee in one episode. Presumably that's why they divert to the coffee nebula.
They are fighting the Borg, and Janeway isn't shy from fighting at the enemy's level!
