The list contains addons that were last updated 3-4 years ago.

3 years ago (Feb 8, 2021): https://addons.mozilla.org/en-US/android/addon/dark-background-light-text/

4 years ago (Mar 26, 2020): https://addons.mozilla.org/en-US/android/addon/redirector/

uMatrix has been archived since 2021.

How are developers going to update them for mobile when they arent even maintined for desktop?

They don't need to be updated to make good test subjects. From the post:
