I never understand why they say the US is a corporation? It isn't and can't be

I recall it being explained as part of the creation of the federal reserve where the corporation of America was formed with citizens being the backing for the central bank.

Gotcha, so the Federal Reserve is a Corporation (though I can't find documentation on that aspect either way) and the laws of the Federal Government allow Corporations to exist so the Federal Government still can't be a corporation!

I know you are not disagreeing, it is just so weird for the Sov Cit's to pick this hill to die on.

They call the Federal Reserve a corporation due to the fact that it actually is a private legal entity. As in, the President of the United States can't tell Jerome Powell, the current Fed chairman, what to do.
