I think the key difference is that the One Piece showrunners were massive fans of the source material and worked very hard, and even with the author, to keep it faithful.
You'd think that'd happen with this adaptation as the Airbender creators have the Dragon Prince in the same studio and workplace.
The o.g show creators were working on this one to start out with, but they both quit the project over "creative differences" or something
