Ah, that's what it's called in the native tongue. Yup, it is. But more on greens instead of proteins.

In Viet (south) it's called Gỏi Cuốn, not Bánh cuốn. Bánh cuốn is more like Cheong Fun, Gỏi Cuốn is Vietnamese ricepaper roll.

If you shallow fry the ricepaper it turns into keropok, and get deconstructed rice paper roll pretty cool.
