This is one of the biggest reasons I hate rural/car-centric living. You have to buy everything in bulk and be diligent with your plan on how to cook or preserve your food. Ya know, the thing that us ADHD folk just excel at doing.

The best time of my life was the few years I lived within walking distance of my local grocery. Less than 5 minutes to and fro on my bike. If I wanted something, I would just take a bike ride to the store. I never had things going bad because I didn't buy in bulk except for shelf stable stuff.

It was the most I ever cooked. Like every couple days I made and tried new things cause I could always just run to the store when the impulse struck me. I was also incredibly healthy cause I was riding my bike every day

Now? Living out in BFE, the closest store being a Dollar General that's a 15 minute car ride away, utterly inaccessible by foot/bike, and the next closest I gotta drive over half an hour into the city if I want real food. I haven't cooked a single thing because I can't shop like I want to. Nothing but prepackaged, frozen meals and shitty ramen.

The solution for me has been to eat mostly imperishable foods - canned beans, boxed tofu, frozen desserts, grains, etc. That way I can go weeks between trips to the grocery store. (I really don't like grocery shopping.)

Heh, at least the beans and tofu are good for me. I hate shopping, I hate cooking, and I only buy vegan food so I'm never going to be low-carb, but the funny thing is that I also have high cholesterol because my own body makes way too much of it.

only buy vegan food so I’m never going to be low-carb,

It's still possible! https://www.dietdoctor.com/low-carb/vegan

high cholesterol

This could be a early indicator of cardio vascular issues (especially if you also have hyper tension). Next time you go to the doctor ask to get a CAC score (calcium imaging in your arteries), its relatively inexpensive (100-200 USD) and tells you about your immediate cardiovascular risk. Alternatively you could look at your TG/HDL ratio as a indirect proxy to determine if the cholesterol is pattern A (non-damaged)

I'm deep into this one now.
