Totally plan on it - my partner loves dill so we have a bunch of fresh dill and other herbs/spices growing, it's gonna be delicious!

Oh! I highly recommend trying both ways, ie lemon juice instead of vinegar and decide which you like better. I like it either way, but I'm more partial to the lemon juice.

Oooh yes I'm very much a lemon juice fan. Just last night I made some pickled cucumbers to have with dinner - chopped cucumbers soaked in lemon juice and rubbed with salt and left for an hour or two. Sooooo good.

Just now I remembered that I made this with pickled red onion and it was fire. Strange taste at first but totally worth it

Hmmm...red onion I could definitely see adding to the flavor. I've had some versions that used sweet white onion, but I'm not sure how pickled red onion would play with the rest of the flavors. I'd be interested to see what it tastes like.
