I don't know what "privacy" you know but I can you a reference of what cybersecurity I know. I had a Cybersecurity course and it's more focused on compliances to standards like ISO 27001/PCI-DSS, regulations like CCPA/GDPR, risk assessment/management, BC/DR, and more. Cybersecurity have a broader meaning to me and essentially a safety net to make sure plans are in place and not let the business down from normal operation.
I would break it up into different catagories.
Your interest in digital privacy is something you can use to talk about your interests and what drives you.
The skills you learned from it is something you could use to supplement how you have progressed other relevant skills for your degree or job your applying to. Be specific about what you did and what it taught you and how its relevant.
Start doing some write ups and post them on your site or medium or [blog platform here]. Put your site URL in the header on your resume, and on your homepage, prominently link everything up. Also get a GitHub presence going in privacy related projects.

Privacy has become a very important issue in modern society, with companies and governments constantly abusing their power, more and more people are waking up to the importance of digital privacy.
In this community everyone is welcome to post links and discuss topics related to privacy.
Some Rules
- Posting a link to a website containing tracking isn't great, if contents of the website are behind a paywall maybe copy them into the post
- Don't promote proprietary software
- Try to keep things on topic
- If you have a question, please try searching for previous discussions, maybe it has already been answered
- Reposts are fine, but should have at least a couple of weeks in between so that the post can reach a new audience
- Be nice :)
