How were the mussels? Can't say I've ever seen mussels at a raw bar.

They cook them. Then chill them for serving. Tasted good. Plump.

Not OP, but they're a lot more chewy and less briny. IMO They're way better cooked for those reasons. You also can't slurp them. What OP described sounds good, though!

Were very yummy. The crudo was black sea bass and trigger fish. I forgot what was in the smoked fish patê.
