Oddest duck pancake experience

At our local place they will make a show of shredding the duck at your table, but the server who does the shredding is some sort of ninja who takes a matter of moments over the work.
Is it normal to receive it unshredded? How odd.
Yeah I haven’t really seen that before either although I haven’t got duck pancake in years, it’s normally at least a little shredded.
No, it's always shredded or sliced. Often at the table. This seems like a case of a chain restaurant trying to copy an authentic experience but without the necessary training to do so.
