I don't think cell tower networks would be because they are probably on wifi when calling(at home) and likely use something like facetime or your choice of free open source messenger which uses the internet.

Tablet linux is not perfect yet, I'd suggest a pixel tablet w/ custom roms unless you are willing to use a slightly buggy linux interface. If you are willing to, look at dell latitude tablets or surfaces

I want to warn you before you consider touchscreens: Linux is 90% of the way there. I own a tablet, and it works fine, SIM is detected, but there are just those little bugs that will drive you insane.

Does your SD card reader itself show up in lsusb? Does anything extra show up in /dev when plugging it in? It may be that there's no partitions on the drive, so you don't see any storage. Could also be either your reader or card not working, however. It would help to get another reader or card to test if your reader or card work.

I had a Surface Pro, and had trouble setting up a Mint on it due to missing drivers for the keyboard

There is a custom kernel for surface devices, and you might need it. Github

I have fn lock on for volume and brightness, so that becomes Alt+FN+F2
