/r/pics is one of the strongest protest subs on my feed right now, I think it's the right idea. /r/interestingasfuck is even better.
Is there a place to see what's blocked, and why?
I'll echo this sentiment. I also lurk communities that I don't agree with, and I want to see dissenting views. I find that heavy moderation often just leads to echo chambers where real issues can be kicked under the rug

This makes absolutely no sense. The smaller the community is, the easier it is to migrate. They could just go to literally any other service.
The community is the people, not the platform.
