I haven't considered pancit for breakfast but I thank you for the idea. That does sound good.
I live in a city with a large Filipino community, and it rocks because nearly every restaurant (doesn't matter it's Italian, Mexican, chicken joint, or sports pub) will have lumpia on the menu. That right there is KittenBiscuit crack.
Lumpia is also great. We've got a little Filipino grocery store around the corner here which I like to grab it from occasionally.
I think pancit is better reheated. Heat it up in a pan with a little bit of peanut oil. I also add a little more soy sauce and garlic than is standard. Mmmmm, going to be so happy tomorrow morning.
Edit: I was indeed very happy this morning.
