Lumpia is also great. We've got a little Filipino grocery store around the corner here which I like to grab it from occasionally.
I think pancit is better reheated. Heat it up in a pan with a little bit of peanut oil. I also add a little more soy sauce and garlic than is standard. Mmmmm, going to be so happy tomorrow morning.
Edit: I was indeed very happy this morning.
