I've never been more upset. Is it too late to replant?

No worries mate. It's easy to put the plants on a pedestal and forget what they are when you care about them so much. Of course damage has been done and it's a substantial setback, but I don't think all is lost. I sent you a message on SXC if you want to chat there.

Replant and water them really well because you need the soil to bind along the remaining root bed. If you're doing organics I'd give them a quick blast of seaweed (not kelp) at the root. Seaweed is full of cytokines and encourages cell division.
